  • Benefits of Sesame Seeds:

    Sesame Seed Recipe: Sesame Seed Brittle (Til Chikki)

    Ingredients:

    • 1 cup sesame seeds
    • 3/4 cup jaggery (or brown sugar)
    • 1 tablespoon ghee (clarified butter) or oil
    • 1/4 teaspoon cardamom powder (optional)

    Instructions:

    1. Roast Sesame Seeds: Dry roast the sesame seeds in a pan over medium heat until they are golden and fragrant. Stir continuously to avoid burning. This should take about 4-5 minutes. Once done, set them aside.
    2. Prepare Jaggery Syrup: In the same pan, add ghee or oil and jaggery. Heat on low flame, stirring continuously until the jaggery melts completely and forms a smooth syrup. This should take about 5-7 minutes.
    3. Mix and Cook: Add the roasted sesame seeds to the melted jaggery syrup. Mix well to ensure all seeds are coated with the syrup. Cook for another 2-3 minutes, stirring continuously.
    4. Flavor (Optional): Add cardamom powder to the mixture and mix well.
    5. Shape the Brittle: Grease a flat surface or a baking sheet with ghee or oil. Pour the sesame-jaggery mixture onto the surface and spread it out evenly using a rolling pin or the back of a spoon. You can also place a piece of parchment paper on top and roll it out to your desired thickness.
    6. Cut into Pieces: While the mixture is still warm, use a knife to cut it into squares or rectangles. Let it cool completely.
    7. Serve: Once cooled, break the brittle into pieces and store in an airtight container.
